
Perfectly Poached Eggs with Smashed Avocado on Sour Dough

Ingredients
- 1 tbsp white wine vinegar
- Gore End Farm Eggs
(as many as you want to poach) - 1 Ripe Avocado
- 2 Rashes of Smoked Bacon
- 1 Slice of Sourdough
Steps
1 Fill a large saucepan with boiling water and add the vinegar. As soon as the water returns to boil, turn the heat down to a gentle simmer.
2 Cook the bacon as per instruction, (we prefer to use an Air Fryer for 7-10 minutes)
3 Meanwhile, cut open the avocado, remove the stone and gently smash the avocado in a bowl using a fork
4 Slice the sour dough and gentle toast on both sides
5 Crack the egg into a small bowl or ramekin.
6 If cooking one egg at a time (our preferred method). Use a whisk to stir the water to create a gentle whirlpool which will help the egg white wrap around the yolk. Then carefully slide the egg into the water making sure the heat is low enough not to throw the egg around – there should only be small bubbles rising.
7 Cook for 3-4 mins, until the white is cooked through.
8 Remove gently using a slotted spoon and blot any water from the base on kitchen paper. You can add more than one egg to the pan but make sure each one has enough room and ignore step 3.
9 Time to serve! Butter the sourdough, top with the freshly smashed avocado, cooked bacon and finally the poached egg. For a little heat top with chilli flakes... Enjoy!
